Ingredients:

For the Orange Layer:

  • 1 cup carrot puree
  • 1/2 tsp cumin powder
  • A pinch of salt

For the White Layer:

  • 1 cup cooked rice or quinoa or cauliflower rice
  • 2 tbsp coconut cream (optional)
  • A pinch of salt

For the Green Layer:

  • 1 cup spinach puree
  • 1 tsp olive oil
  • A squeeze of lime

Garnish:

Microgreens or finely chopped coriander

Method:

Prepare Carrot Puree:

Steam carrots until soft and blend into a smooth puree—season with cumin powder and salt.

Prepare Rice:

Cook Rice(almost done), quinoa or grate cauliflower to resemble rice grains. Toss with a little coconut cream for flavour.

Prepare Spinach Puree:

Blanch spinach, and blend with olive oil and lime for a creamy texture.

Assemble the Dish:

Create a base layer on a plate or bowl with the carrot puree, followed by the quinoa or cauliflower rice, and top with spinach puree. Garnish with microgreens.
